A study led by the University of Vermont and published in the Journal of Hunger & Environmental Nutrition showed that food hubs provide a service and a market outlet for the small manufacturers and farmers who supply them. A series of surveys revealed that suppliers value the market and supplier development of food hubs' mission. Associate Professor David Conner, who led the study, says, "It shows how well the hubs keep the name and story of the farm with the food and how valuable that is to all."
