Internship informationGeneral Farm Description: Acorn Hill is a NOFA-NY Farmer's Pledge small family farm and micro-creamery in southwestern Ulster county (Mid-Hudson Valley/Catskill region). We milk approximately 35 dairy goats and produce cheeses in our on farm creamery.Products are sold at farmer's markets, through CSAs, to Chefs, and are distributed throughout the region

Internship is very hands on and immersive giving the right candidate an opportunity to learn the skills needed to work on or own a small goat dairy along with cheesemaking in our on farm creamery. This opportunity is not for the casual internship seeker or undecided individual and is more suited to those with some full season farming experience on their resume. Food handling experience is helpful for those interested in cheesemaking.
Educational Opportunities: Learn organic dairy goat management, FAMACHA, fecal egg counting, and body condition scoring, cheese-making, marketing, and regulatory issues in farmstead dairy. Also learn about NYS regulations for home kitchen production of value added farm products. This internship will give you not only the knowledge to get the job done but extensive experience as well. Education is mainly through doing with explanation of various aspects of methods and background of topics relevant to the herd and cheese production. Reference materials are provided through relevant articles and videos along with access to our small farm library. Generally we take a couple of field trips to other area farms either spontaneously or NOFA-NY field days We also have a small flock of ducks that provide eggs for market and act as a part of the farm system
Skills Desired: Candidate must have at least on seaon of farming experience (with references) preferably with livestock but may consider those with a very strong interest in diversified or dairy farming. Patience, persistence, a sharp eye for detail, and the ability to remain sharp through repetitive tasks along with good common sense thinking skills required. Must be able to lift 50 lbs regularly and have plenty of energy to take on the challenges some days on the farm can toss our way. Work in the creamery requires the ability to follow instructions to the letter and understand the importance of good sanitation in the production of farmstead cheeses.
Meals: Meals are intern's responsibility . A share of goat milk, cheese, and garden produce (in season), and duck eggs is available.

Housing: One bedroom apartment in our home with full kitchen, WiFi and utilities included. Non-smokers only please and absolutely no pets. Spring through fall season requires sharing of the apartment. Winter season we have only one intern. Further details discussed at interview.
