New Publications Aid Maple Syrup Producers with Sap Chilling

The Cornell Maple Program has published two new bulletins to aid maple syrup producers with chilling sap to prevent spoilage and provide flexibility in processing. They are the results of a project designed to address significant challenges for producers to maintain tree sap yield and quality, given increasing temperatures in the sugarbush. The first bulletin is an overview of sap chilling techniques with a focus on glycol chilling. The second contains step-by-step DIY instructions for building your own glycol chiller from a window AC unit and a picnic cooler. Both bulletins provide useful information for both hobbyist and commercial maple producers.
